Frozen Blueberry Daiquiri

It’s been a while since I posted on this blog, I’ve been eating of course, just nothing you’d care to read about.

Since Britain has been baking hot, my thoughts turned to ways to cool off.  I reminisced about Slush Puppies as a child, so cold it would paralyse one half of your brain.

In the absence of Slush Puppies – what happened to them anyway?  I set about deconstructing the contents of my freezer to see what I could rustle up and give it an 18 certificate, and here is the result:

You will need:

  • White Rum
  • Frozen Blueberries
  • Lime Juice
  • Sugar Syrup
  • Soda Water
  • Ice

A daiquiri doesn’t actually call for soda water, but I found the volume it made was rather stingy and I wanted a pitcher to myself, so I strung it out with soda water – it also helped thin it enough to stop it being a giant ice cube and thus drinkable.   if you’re worried it will water your drink down then just add more rum, easy.

To start pour loads of rum into a blender, then chuck in a couple of handfuls of frozen blueberries, and start pulsing, then add lime juice, and loads of ice and start blending.   Add soda water now and then to help dilute it when it becomes too frozen to actually be blended.   Keep going til you get it how you want to, and add sugar syrup to sweeten it.

If you use other fruits that may have seeds, then add the rum last as you may want to sieve the blended mixture and you don’t want to lose any boozy goodness down the sink.

This was deliciously thick , I did it again which was more diluted but it was not nearly as refreshing.    I became incredibly tipsy and flirtatious after a pitcher, which is very amusing when you are drinking alone.
